Chicken Marsala

Ingredients

  • 4 butter
  • 4 boneless, skinless chicken breasts (pounded to 1/4 inch thickness)
  • 4 shallots (finely chopped)
  • 1/2 mushrooms (sliced)
  • 1/4 dry Marsala wine
  • 1/2 heavy cream
  • 1 tsp lemon juice
  • salt and freshly ground pepper (to taste)

Instructions

  1. In a large frying pan, melt 2 T of butter over medium heat
  2. Add chicken and sauté, turning once until lightly browned 3-5 minutes
  3. Add Marsala and bring to boil, scraping up any browned bits from the bottom
  4. Add cream and lemon juice and return to boil
  5. Season with salt and pepper to taste
  6. Return to pan and cook, turning in sauce for about 3 minutes to reheat and finish cooking
