Creamy Tuscan Chicken

Ingredients
- 2 tbsp extra-virgin olive oil
- 4 boneless skinless chicken breasts
- kosher salt
- freshly ground black pepper
- 3 garlic (minced)
- 2 cherry tomatoes (halved)
- 3 baby spinach
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup freshly grated Parmesan
- 1/4 tsp red pepper flakes
- fresh basil (for garnish)
Instructions
- In a large skillet over medium-high heat, heat oil. Add chicken and season with salt and pepper. Cook until golden and cooked through, 8 minutes per side. Remove from skillet and set aside.
- Add garlic to skillet and cook until fragrant, 1 minute, then add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach. Cook until spinach is beginning to wilt.
- Stir in heavy cream, chicken broth, Parmesan, and red pepper flakes. Bring mixture to a simmer.
- Reduce heat to low and return chicken to skillet. Simmer until sauce has reduced slightly, about 3 minutes.
- Garnish with basil before serving.
Notes & Tips
This dish is rich and creamy with sun-dried tomato flavor. Serve over pasta, rice, or with crusty bread. Can substitute sun-dried tomatoes for cherry tomatoes for a more traditional Tuscan flavor.
