Creamy Tuscan Chicken

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 4 boneless skinless chicken breasts
  • kosher salt
  • freshly ground black pepper
  • 3 garlic (minced)
  • 2 cherry tomatoes (halved)
  • 3 baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup freshly grated Parmesan
  • 1/4 tsp red pepper flakes
  • fresh basil (for garnish)

Instructions

  1. In a large skillet over medium-high heat, heat oil. Add chicken and season with salt and pepper. Cook until golden and cooked through, 8 minutes per side. Remove from skillet and set aside.
  2. Add garlic to skillet and cook until fragrant, 1 minute, then add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach. Cook until spinach is beginning to wilt.
  3. Stir in heavy cream, chicken broth, Parmesan, and red pepper flakes. Bring mixture to a simmer.
  4. Reduce heat to low and return chicken to skillet. Simmer until sauce has reduced slightly, about 3 minutes.
  5. Garnish with basil before serving.

Notes & Tips

This dish is rich and creamy with sun-dried tomato flavor. Serve over pasta, rice, or with crusty bread. Can substitute sun-dried tomatoes for cherry tomatoes for a more traditional Tuscan flavor.
